buffalo style

Winter weather always makes me crave comfort food. Here's a super healthy meal perfect for a night-in.

Buffalo Chili
Here's what you need:
Chopped bell peppers (yellow, red, green)
Chopped Onions
1 can Black Beans
1 can Red Beans
2 cans crushed tomatoes
1 bag frozen corn
2 chopped Jalepenos (w/seeds if you want it spicy!)
1 pound Buffalo meat (buffalo is lean and has less fat than regular ground beef)
Cumin
Chili Powder

Saute the meat. Drain and set aside. Then put all your veggies in a pot til they get nice and soft. Add crushed tomatoes and drained beans. Add the meat. Cover and simmer for about 1 hr. Enjoy!

so funny that you posted this. last night, i couldnt sleep so i made a list of ingredients on my iphone of things to make chili this week. i'm planning for a quiet night in on friday with my chili :)

SOLD. well, minus the buffalo i guess.

This looks so yummy! And you can actually make it vegetarian. There's this brand of fake meat called Gimme Lean and I swear, it's just as good as the real thing. At least I think so and I'm not even a vegetarian myself.
